Beef Baked with Potatoes

Ingredients
For the Beef
- 1 lb (450 g) beef, cut into chunks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and black pepper, to taste
For the Potatoes
- 4 medium potatoes, peeled and cut into chunks
- 1 tbsp olive oil
- 1 tsp dried rosemary
- Salt and black pepper, to taste
Optional Vegetables
- 1 carrot, sliced
- 1 onion, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine the beef chunks with olive oil, minced garlic, paprika, salt, and pepper. Mix well until all pieces are evenly coated.
- In a separate bowl, toss the potato chunks with olive oil, rosemary, salt, and pepper.
- If using, add the sliced carrot and onion to the potato mixture and toss to combine.
- Grease a baking dish lightly. Place the seasoned beef in the center of the dish and arrange the potatoes and vegetables around it.
- Cover the dish with foil and bake for 40 minutes.
- Remove the foil and return the dish to the oven. Bake uncovered for another 15–20 minutes, until the potatoes are golden and the beef is fully cooked.
- Remove from the oven and let rest for 5 minutes before serving.
Serving Suggestion
Serve warm as a complete meal. Fresh herbs such as parsley or thyme can be added just before serving for extra aroma and flavor.
