How to Make Roast Beef with Orange Sauce
- Season and Sear the Beef: Season the veal with salt and black pepper. Heat olive oil in a large pot or deep skillet over medium-high heat. Sear the meat on all sides until well browned.
- Add the Vegetables: Add the garlic, onion, and carrots to the pot. Sauté for 2–3 minutes until lightly golden.
- Add Liquids and Aromatics: Pour in the orange juice, add the orange zest, white wine (if using), honey, and soy sauce. Add the rosemary sprig and bring to a gentle boil.
- Slow Cook the Beef: Reduce the heat, cover the pot, and simmer for 1 hour to 1 hour and 15 minutes, or until the meat is very tender. Stir occasionally and turn the meat if needed.
- Prepare the Sauce: Remove the beef and vegetables from the pot. Bring the cooking liquid to a boil, then stir in the cornstarch mixture. Cook for a few minutes until the sauce thickens and becomes glossy.
- Serve: Slice the beef and serve with the orange sauce poured over the top.
