Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then stir in the onion flakes (or diced onion), refried beans, and taco seasoning. Cook over low heat until well combined and heated through.
  3. Warm the enchilada sauce in a saucepan. Pour about 1 cup of sauce into the bottom of the prepared baking dish.
  4. Wrap the corn tortillas in a damp paper towel and microwave for 45–60 seconds until soft and pliable.
  5. Brush each tortilla lightly with enchilada sauce on both sides. Spoon about 1/3 cup of the beef mixture into the center and sprinkle with cheese. Roll tightly and place seam-side down in the baking dish.
