- 8 oz Colby Jack cheese, shredded

Instructions
- Heat a large skillet over medium-high heat. Add the smoked sausage, onion, and green bell pepper. Cook for 5–6 minutes until the sausage is browned and the vegetables are softened.
- Add the minced garlic and cook for 1 minute, stirring constantly.
- Season with salt, black pepper, smoked paprika, and onion powder. Stir well to combine.
- Add the rinsed rice and chicken broth. Stir and bring the mixture to a full boil.
- Reduce heat to medium-low, cover the skillet, and simmer for 20 minutes. Halfway through cooking, stir in the frozen broccoli florets.
- Once the rice is tender and most of the liquid is absorbed, stir in half of the shredded cheese until melted.
- Sprinkle the remaining cheese over the top. Cover or place under a broiler for a few minutes until melted and lightly golden.
